  • White Chocolate Mini Cheesecakes

Longing for these creamy and dreamy morsels without having to live with the guilt? Worry no more because they come along in a healthy makeover recipe. Enjoy!

This recipe makes twelve servings. The preparation time takes about twenty minutes, and do spare another twenty for the baking.

Each cheesecake contains one hundred and fifty three calories, four grams of protein, seventeen grams of carbohydrates, and seven grams of fat where four grams are saturated.

Prepare the following ingredients: twelve reduced-fat vanilla wafers, eight ounces of softened reduced-fat cream cheese, four ounces of softened fat-free cream cheese, three ounces of melted and cooled white chocolate baking squares, a half cup of sugar, a quarter cup of fat-free milk, one and a half teaspoons of vanilla, a lightly beaten egg white, and add chocolate curls, sliced strawberries, and sliced kiwifruit only if you want to.

Now, on to the baking. First, preheat the oven to three hundred and fifty degrees Fahrenheit. Line a muffin pan with twelve 2.5-inch foils or paper baking cups. Place one vanilla wafer on top of each cup. Set aside. Now, in a medium bowl, beat cream cheeses with an electric speed set to medium speed for thirty seconds. Beat in the white chocolate, sugar, milk, and vanilla until all the ingredients are well mixed. Stir in the egg white. Spoon mixture into muffin cups until each in about three-fourths full. Bake for about twenty minutes or until set. Then set the pan onto a wire rack to let cool for ten minutes. Remove the cheesecakes from the pan. Let cool on the wire rack for an hour. Cover and chill for three to twenty four hours. Before serving, remove the baking cups. If you want, garnish the cheesecakes with chocolate curls, strawberries, and/or kiwifruits. Enjoy!

This recipe makes two servings. Prepare the following ingredients: two cups of non-fat ricotta cheese, two bananas that are split lengthwise, sixteen walnut halves, a teaspoon of unsweetened cocoa powder, and two teaspoons of cherry concentrate which is readily available at health-food stores.

Now, the process is so fast and easy. Trust me. All you need to do is to spoon ricotta cheese into a dessert dish and place a banana half onto each side of the cheese. Put the walnut halves on top and dust the cocoa powder on top. Drizzle the cherry concentrate on top.
