If you are a massive fan of eggs, then you should have them often especially at breakfast. Not only are they oh-so yummy. They are also a magnificent source of protein and other highly important nutrients the body needs to keep going and to stay in perfect health. Learn some fantastic and really easy recipes to do with your beloved eggs.

  • Waffles With Ham and Egg

For this scrumptious recipe with a bizarre yet surely amazing set of ingredients, please prepare the following: four thick slices of Canadian bacon or deli ham, four eggs, four frozen wholegrain waffles, two tablespoons of maple syrup, cheddar cheese, and salt and black pepper to taste. You may add parsley if you choose to.

It is super fast and easy. First, heat a non-stick skillet or sauté pan over medium heat. Coat the pan with olive oil cooking spray and cook your Canadian bacon or deli ham for a few minutes on each side. You would know when it is done when all sides are already well browned. Once done, remove the bacon from the pan and set aside. Coat the same pan or skillet with a little bit more oil. This time, you would cook the eggs. You may do two eggs at a time. Just remember to not overcrowd the pan. You would be preparing sunny side up eggs. Cook until the whites have set but the yolk is still runny. In the mean time, toast your waffles. Top each waffle with a slice of meat, a drizzle of maple syrup, a sprinkle of cheddar cheese, and the sunny side up eggs. Season the dish with salt and pepper. You may add your parsley if you want. Serve right away.


  • Spinach, Mushroom, and Mozzarella Omelette

For this, you would need two egg whites, two eggs, three tablespoons of water, a teaspoon of crushed dried Italian seasoning, a quarter teaspoon of salt, eight ounces of sliced mushroom, a chopped onion, a chopped red bell pepper, a minced clove of garlic, four ounces of chopped spinach leaves, and three-fourths cup of shredded low-fat mozzarella cheese.

First, preheat the oven to two hundred degrees Fahrenheit. Coat the baking sheet with cooking spray. In a medium bowl, whisk the egg, egg whites, water, Italian seasoning, and salt, and set aside. Coat a large non-stick skillet with cooking spray and heat over medium heat. Add the mushrooms, onion, pepper, and garlic. Stir often while cooking. When the pepper starts to soften which would take about four minutes, add the spinach and cook for a minute or until the spinach is wilted. Place in a small bowl and cover. Now, wipe the skillet with a paper towel and coat with cooking spray then put over medium heat. Pour in half of the egg mixture. Cook until bottom begins to set which would take about two minutes, and using a spatula, lift the edges to allow the uncooked part flow to the bottom of the pan. Cook until set. Sprinkle with half of the veggie mixture and half of the cheese. Cover and cook until cheese melts. Fold in half using the spatula. Placed on the prepared baking sheet and put in the oven to warm. Coat the skillet with the cooking spray and repeat the process with the remaining ingredients for another dish. Serve immediately.
