here’s what you’ll need:
16 pieces (3 ½” diameter) chocolate chip cookies/oatmeal/raisin cookies; you can actually use other sizes though this is more efficient to make it in a sandwich form
1 piece large ripe banana
1 teaspoon lemon squeezed juice
¼ cup hazelnut spread or crunchy peanut butter
432 grams Fruit Cocktail (drained, syrup reserved)
how to make:
1. Spread eight pieces of cookies with peanut butter/hazelnut spread. Set aside.
2. Cut banana crosswise into thin slices and soak in fruit cocktail syrup with lemon juice. Drain.
3. Place 2-3 pieces of banana slices over cookies with spread. Top with the Fruit Cocktail. Cover with another cookie to make a sandwich.
4. Wrap each cookie sandwich in foil or wax paper. Chill until ready to serve.
You can actually replace the banana to any other fruit of your choice like mangoes, kiwi, strawberries, blue berries, or any combination of fruits. You don’t really need to have a fruit cocktail you can just mix different fruits though you have to make sure you soak it in lemon juice because it is the source of ascorbic acid which will prevent the fruit from browning.
You can actually choose the type of cookie you are going to use if you are on a low-carb diet. You can choose whole wheat cookies or oatmeal cookies rather than chocolate chips. Don’t worry about using peanut butter because it is not really bad for you. Peanut butter is a good source of good cholesterol that is essential to our body. Just make sure you buy those that are purely made from peanuts and are not made with flavorings those that contain additives. You may also use cream but it is risky since cream is made of fat which is not so good for our health.
