Fruity Cookie Sandwich

No one can actually deny the fact that fruit on any form but most especially on its basic form is indeed very nutritious. Making it part of your snack or any meal is very efficient to increase nutritional value of your food and also helps to properly digest the food because of the fiber naturally present in it. I personally like eating fresh fruits but if you are not used to it, you can be creative and add it to some recipe or make it into fruit juices. From there, you can actually enjoy eating fruits and acquire the nutrients it contains. Check out this fruity cookie sandwich and see if you like the result.

here’s what you’ll need:

16 pieces (3 ½” diameter) chocolate chip cookies/oatmeal/raisin cookies; you can actually use other sizes though this is more efficient to make it in a sandwich form
1 piece large ripe banana
1 teaspoon lemon squeezed juice
¼ cup hazelnut spread or crunchy peanut butter
432 grams Fruit Cocktail (drained, syrup reserved)

how to make:

1. Spread eight pieces of cookies with peanut butter/hazelnut spread. Set aside.

2. Cut banana crosswise into thin slices and soak in fruit cocktail syrup with lemon juice. Drain.

3. Place 2-3 pieces of banana slices over cookies with spread. Top with the Fruit Cocktail. Cover with another cookie to make a sandwich.

4. Wrap each cookie sandwich in foil or wax paper. Chill until ready to serve.

You can actually replace the banana to any other fruit of your choice like mangoes, kiwi, strawberries, blue berries, or any combination of fruits. You don’t really need to have a fruit cocktail you can just mix different fruits though you have to make sure you soak it in lemon juice because it is the source of ascorbic acid which will prevent the fruit from browning.

You can actually choose the type of cookie you are going to use if you are on a low-carb diet. You can choose whole wheat cookies or oatmeal cookies rather than chocolate chips. Don’t worry about using peanut butter because it is not really bad for you. Peanut butter is a good source of good cholesterol that is essential to our body. Just make sure you buy those that are purely made from peanuts and are not made with flavorings those that contain additives. You may also use cream but it is risky since cream is made of fat which is not so good for our health.

This recipe is good to make 8 servings. Nutritional value will differ on the type of cookie and the fruits you are to use. This is a perfect recipe for snacks or for desserts on at home or during special occasion. You can simply store it in the fridge and take it out when you need or feel like eating something sweet. This is surely something that will win the heart of the whole family when they finally get to taste this treat. Aside from that, this recipe is cheap, healthy and very easy to prepare which makes it a winner! Enjoy!
