Say Cheese!

Because we all love the goodness of cheese, we have for you some yummy recipes that feature our favorite. Enjoy!

  • Cheese Toasts

Enjoy the classic cheesy treat. This recipe is good for twelve servings. It only takes ten minutes to prepare and another ten minutes to cook.

Have these following ingredients ready: a loaf of bread, miracle whip, a white onion, mild cheddar of American cheese. Take note that if you want to go healthy, opt for a whole wheat or organic loaf of bread.

First, slice the bread evenly and cut into bite-size squares. Toast the cut breads in the oven gently until they are all crisp but not browned. Meanwhile, chop the onion into fine pieces. After the toast has cooled, spread a thin layer of miracle whip on top. Sprinkle a few chopped onions on top of each toast. Then, sprinkle on top of each toast shredded cheese. Broil until the cheese is already melted or until it turns golden. Serve immediately.


  • Chicken Enchiladas

This high-fiber recipe makes about six servings. The preparation time takes about fifteen minutes and thirty five minutes goes to the cooking time.

Prepare the following ingredients: two and a quarter cups of salsa, a can or fifteen ounces of rinsed and drained black beans (with no salt added), one and a half cups of thawed frozen corn kernels, one and a half teaspoons of cumin, two cups or ten ounces of shredded cooked chicken breast, three ounces or three-fourths cup of shredded reduced-fat pepper Jack, three ounces or three-fourths cup of shredded cheddar cheese, and twelve whole six-inch diameter tortillas.

First, preheat the oven to 375 degrees Fahrenheit. Coat a 13x9x2 baking dish with cooking spray. Spoon a half cup of salsa on the dish. Then, in a bowl, toss together the beans, corn, cumin, and three-fourths cup of salsa. Reserve a half cup of the bean mixture then set aside. Afterwards, divide the chicken, the bean mixture, and a half cup of each of the cheeses among the tortillas. Roll up to enclose the filling and arrange seam side down in the dish. Spoon the remaining salsa and the reserved bean mixture on top. Cover the dish with foil and bake for twenty five minutes. Uncover then sprinkle with the remaining cheese. Bake for another ten minutes.


  • Mac and Cheese

This traditional food we all used to love comes back to fill our hungry tummies. This recipe makes about four servings and only takes a total of thirty minutes.

Prepare: two cups of elbow macaroni, fusilli, or cavatappi pasta, two tablespoons of butter, two tablespoons of flour, two cups of 2% milk, a cup of shredded extra-sharp cheddar, a half cup of shredded mozzarella, a half cup of grated Gruyere or other Swiss cheese, a quarter cup of Greek yogurt, a half cup of panko bread crumbs, a quarter cup of grated Parmesan, and pepper to taste.

First, cook the pasta by following the instructions on the package. Cook until al dente. Drain and set aside. Meanwhile, melt the butter in a saucepan over medium heat. Sprinkle in the flour and cook for a minute while stirring constantly. Then, gradually whisk in the milk and cook until thickened while stirring often. Add the Swiss cheese, cheddar, and mozzarella, and stir until melted. Remove the heat, and then add in the yogurt and the cooked pasta. Toss. Afterwards, heat the broiler. Put the mac and cheese mixture into an eight-inch square baking dish. Top with the bread crumbs and Parmesan and season with pepper. Broil until the bread crumbs turn golden brown.
